Turkey and Rice Casserole

This is a one way to use up some leftover turkey!

Serves 6

Time required: 30 minutes

3 cups cold cooked rice
2 cups cold chopped cooked turkey
2 medium tomatoes, finely diced
1/4 cup sliced scallions
1/2 cup diced green pepper
1 tablespoon chopped fresh basil
salt and pepper
red pepper flakes to taste
1/2 cup milk
3 eggs
1 cup shredded cheddar cheese


Preheat oven to 375.

Combine all ingredients except cheese in a large flat greased casserole. Top with cheddar cheese. Bake for 20 minutes at 375. Serve hot.
